Caramel Apple Cake
Serves 8
For inner caramel:
¼ c Organic Valley Butter, melted
2/ 3 c brown sugar, lightly packed
For the cake:
2 apples, cored, peeled, thinly sliced
1 ½ c flour
1 tsp baking powder
½ tsp cinnamon
1/ 8 tsp nutmeg
¼ tsp salt
1 c Organic Valley Butter, softened
1 c sugar
2 Organic Valley Large Eggs
½ tsp vanilla
½ c Organic Valley Milk
For caramel topping:
1 c brown sugar
½ c Organic Valley Butter
¼ c Organic Valley Milk
1 tsp vanilla
¼ c salt
Preheat oven to 350 degrees. Generously grease a round 9-inch baking pan.
For the inner caramel, combine butter and brown sugar in a small sauce pan over medium heat, stirring until smooth. Pour into prepared pan. Arrange apple slices on top of caramel so they slightly overlap.
To make the cake, combine flour, baking powder, cinnamon, nutmeg and salt in a small bowl; set aside. Beat sugar and softened butter on medium-high speed with an electric mixer until pale and creamy, about 3 minutes. Add eggs, one at a time, mixing after each. Mix in vanilla.
Add flour mixture in 3 additions, alternating with milk, and ending with flour mixture; mix until just combined. Pour batter over apple slices and gently spread into an even layer.
Bake cake until top is golden brown and center springs back when gently pressed, about 45-55 minutes. Let cake stand about 10 minutes. While cake is still warm, run a knife around the edges and invert onto a plate or cake stand.
For the caramel topping, combine brown sugar, butter, milk, vanilla and salt in a medium saucepan over medium heat. Bring to a boil and simmer 3-4 minutes, stirring often, until caramel is smooth and thickened.
Drizzle caramel sauce over sliced cake before serving, and enjoy! To serve, sprinkle pie crust crumbles on top of each. Optional: drizzle with a little maple syrup
