Chocolate, Coconut and Walnut Tart
Want to create something special this month for your friends, yourself or your valentine? This gluten free tart is rich and romantic and can easily be made vegan with a honey to maple syrup swap! If you really want to take the decadence up a notch, try serving it with a scoop of coconut milk ice cream, an additional sprinkling of rose petals and a drizzling of chocolate glaze. Divine!
2 ½ cups walnuts, coarsely ground
2 ½ cups shredded coconut
½ cup honey, maple or coconut syrup
¼ cup coconut oil, melted
½ tsp sea salt 1 tsp vanilla extract
½ cup honey or maple syrup
¼ cup coconut oil
2 Tbl coconut milk
1 cup raw cacao powder
1 Tbl crushed rose petals
¼ cup shredded coconut, toasted
½ cup walnuts, toasted and chopped
Optional: coconut milk ice cream, chocolate glaze
Preheat oven to 350°. Prepare an 8 x 10 pan or 9-inch pie dish by rubbing generously with coconut oil.
In a large mixing bowl, combine first 6 ingredients and mix well. Press mixture evenly into prepared pan.
Bake 12-15 minutes until just golden brown. Check frequently in the last few minutes to make sure it doesn’t burn. Remove from oven and allow to cool 15 minutes.
Place honey, coconut oil and coconut milk in a saucepan and heat over medium. Stir continually until ingredients are fully incorporated and very warm, but not boiling.
Remove from heat. Whisk in cacao powder. Stir until mixture is well combined and silky smooth.
Pour over cooled crust and spread evenly. Sprinkle with rose petals, toasted coconut and toasted walnut pieces. Tart may be sliced and served warm or chilled. Sliced tart can be placed in an airtight container and refrigerated for up to 7 days or frozen for up to a month. Makes 8-10 servings.
