Pumpkin Cashew Cheesecake
with a Chocolate Sun Butter Swirl
Serves 16
Gluten free, vegan, dairy free, soy free and refined sugar free
For the Chocolate Base
1½ c almond meal (1 cup almonds, blended into a fine, mealy consistency)
6 dates, seedless or 6 tablespoons maple syrup (or raw honey)
1 Tbl water
1 Tbl coconut oil
¾ c cacao powder
dash vanilla
dash ea salt
For the Cheesecake Filling
¾ c lemon juice (about 2 large lemons)
3 c cashew nuts, soaked in water for
4 hours to soften
½ c maple syrup
¼ c puréed pumpkin
¾ c coconut oil
1 Tbl pure vanilla extract
pinch sea salt
Chocolate Sauce
2/ 3 c cacao powder
½ c maple syrup
¼ c extra virgin coconut oil
2 Tbl sun butter
First, make the Chocolate Base. In a bowl, combine all ingredients. The mixture should be dry, but moist enough to pat into a pie dish and form a crust. Turn the base mixture into a deep pie dish (large enough to hold 2ó quarts) and hand mold it to evenly cover the bottom and sides. Set aside.
Make the Cheesecake Filling. Put all the ingredients in a powerful blender and blend them until the filling is very smooth and light. Then pour the filling into the prepared crust.
Then make the Chocolate Sauce recipe by adding all ingredients to blender and mixing until smooth. Use a butter knife to smooth the chocolate sauce over the cheesecake filling and create a swirl pattern. Do the same with the sun butter and make a swirl patter.
Refrigerate to set for 4 hours, then cut into slices and serve.
