Easy Meals to Calm the Mayhem
Fall has arrived! The air is crisp and clear, the days are cooler, and the kids are back in school. It’s a great time to establish a new routine. Why not make meal prep part of it? Keeping food stress low will make the entire week easier, especially if you are packing school lunches on a daily basis. Here are some go-to tricks for making meals easy during the hustle and bustle of fall.
For lunches, take time on Sunday to get all the snacks packaged up. This might mean washing all the grapes and putting them into individual bags or portioning crackers into bags ahead of time. These small tasks aren’t difficult, but saving even 5 minutes as you are running out the door can be the difference between a cranky kid and a smile as they step onto the bus. Save more time by making some simple sandwiches in bulk and freezing them. A tortilla with pepperoni and sprinkle of mozzarella cheese rolls up perfectly for freezing, as does peanut butter and honey. Each morning, pull a pre-made tortilla out of the freezer and toss it in their lunch bag. It thaws while it keeps the rest of the lunch cool and saves you from making a sandwich!
For dinner ease, consider making slow cooker meals in advance and freezing them. Before you head out for the day, dump the entire frozen block into the crock pot. If your slow cooker is more of a fast cooker and doesn’t have a delay start feature, plug it into a lamp timer and tell it when to start. Another great option is to make dinners that can cook from frozen. As soon as you get home, pre-heat the oven and add your pre-made casserole or chicken dish to the oven. Now you have 30-60 minutes to unload the car, start laundry, get homework finished up, and enjoy a glass of wine. With no more work than setting the table, dinner is ready.
When you prep the meals, make 3 or 4 of each. It doesn’t take much more time to make 4 meals than it does 1. Setting aside time for meal prepping will save you so much more time in the long run!
